LEMON CRINKLE COOKIE 
2 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
1 1/4 c. sugar
3/4 c. soft shortening
1 tsp. salt
1 egg
1 tsp. lemon extract
1/4 c. milk
1/4 c. sugar

Mix flour, baking powder and soda in a small bowl. Beat sugar, shortening, and salt in a large bowl until light and fluffy. Add egg and extract. Beat well, scraping sides of bowl often. Gradually beat in milk. Add flour mixture and beat at low speed. Chill dough 30-60 minutes. Shape dough with wet hands into 1 inch balls. Roll in sugar. Place on ungreased cookie sheet about 2 inches apart. Bake at 350 degrees about 12 minutes, or until light brown.
