SESAME RED SNAPPER 
1 1/2 lbs. fillets
3 tbsp. sherry
1 tbsp. lemon juice
1 tbsp. soy sauce
1 1/2 tsp. toasted sesame seeds
1 clove garlic
1 scallion, chopped

Rub both sides of fish with garlic. Discard garlic. Place fish skin side down in casserole. Pour sherry, lemon juice and soy sauce mixture over fish. Broil 8 to 10 minutes, basting with pan juices. Place fish and juices on platter and sprinkle with scallions and toasted sesame seeds.
