SWEET AND SOUR CHICKEN (PORK) 
1 lb. chicken or pork
1 tbsp. vegetable oil
1 med. onion, diced (or use onion powder)
1 glove garlic, pressed or garlic powder
3 carrots (7" approx.), sliced thinly
1 med. to lg. bell pepper, seeded & cut into pieces
2 (8 oz.) cans chunk or tidbit pineapple, undrained
1/4 c. white vinegar
3 tbsp. brown sugar
3 tbsp. catsup
3 tbsp. soy sauce
1 tbsp. cornstarch
1 tsp. ground ginger (optional)

Cut chicken or pork into 1/2" pieces. Brown in oil. Reduce heat to low, add onion and garlic. Cover, cook 10 minutes. Add carrots, green pepper and pineapple. Combine remaining ingredients. Stir into skillet. Cover, simmer 30 minutes longer. Serve with rice. Makes 4 servings.
