KIBBE 
2 1/2 lbs. ground lamb
1 1/2 c. wheat (fine borgul from Greek import store)

Blend in blender or chop fine the following: 1 lg. onion 1 tbsp. salt 1/2 stick butter or 3 tbsp. oil (olive or corn oil) 1 tsp. allspice 1 tbsp. spearmint 3/4 c. water

Soak wheat in water until almost double in bulk. If using a medium bowl, cover wheat with water to top of bowl. Place lamb in large bowl. Now with both hands squeeze wheat until all water is out and keep putting each handful over lamb. Mix all other ingredients over lamb and blend together until it is well mixed.

Shape into meat patties and fry in Crisco or Spry. Instead of frying, you could bake in oven either in patties or in cake pan like a meat loaf (325 degrees). Fried is tastier.
