FRUIT AND CHEESE PIZZA 
1 (20 oz.) pkg. sugar cookie dough, frozen
1 (8 oz.) cream cheese, softened
1/3 c. sugar
3 tbsp. brandy
1/2 tsp. vanilla
4 c. thinly sliced fruit
1/2 c. apricot preserves

Preheat oven to 375 degrees. Cover pizza pan with foil. Cut cookie dough into 1/4 inch rounds. Arrange on pan and press dough together. Bake until puffy and golden about 10 minutes. Cool completely. Combine cream cheese, sugar, 1 tablespoons brandy and vanilla in bowl. Spread over crust. Arrange fruit. Melt preserves with remaining brandy over low heat. Strain and brush over fruit. Chill 1 hour.
