ERMA'S BEAN SOUP 
2 c. bean soup mix
2 qts. water
1 lb. ham, diced
1 lg. onion, chopped
1 clove garlic, minced
1/2 tsp. salt
1 (16 oz.) can tomatoes
1 (16 oz.) can tomatoes and green chilies

Wash and sort beans. Soak overnight in water 2 inches above beans. Drain and discard water. Add the 2 quarts of water and next 4 ingredients. Cover, bring to boil; reduce heat, simmer 1 1/2 hours or until tender. Add other ingredients and simmer 30 minutes. Makes 8 cups. Bean soup mix can be any combination of dried beans and-or lentils.
