WILL MALINDA'S TOMATO SOUP (CANNED) | |
14 qt. tomatoes, not peeled Cook with 2 quarts water. When this begins to boil, add 7 onions, 11 sprigs parsley, 14 stalks celery. Cook all together until well done. Put through sieve. Combine: 14 tbsp. melted butter 14 tbsp. flour 16 tbsp. sugar 4 tbsp. paprika 8 tbsp. salt 1/4 tsp. red pepper 1 pt. water Cook this mixture until thick. Strain, if necessary. Add to tomato mixture. Cook 30 minutes. Pour in jars and seal. |

I think on my next batch I go with even less salt, and maybe double the red pepper.
This is a great way to put up loads of tomatoes and prepare for winter dinners.
