KIM'S CHICKEN IN THYME | |
1 green bell pepper 1 red pepper (in season) 3 sm. zucchini 1 lg. onion 1 c. chicken broth 1 tbsp. thyme 5 boneless chicken breasts, skinned Cut peppers and peeled zucchini in thin strips lengthwise. Dice onion. Fry together in 1 tablespoon of olive oil, until onion is transparent, 5 or 10 minutes. Dice up chicken into small cubes. Cook in 1 tablespoon of olive oil in separate pan. Cook until meat is brown on both sides. Add chicken to veggies. Pour in chicken broth and add thyme. Cook this until broth reduces somewhat. Total time about 30 minutes to prepare. As a variation instead of frying you can put everything into a large baking dish and bake at 350 degrees for 35 minutes. |
