PICO DE GALLO 
1 onion, chopped
3 tomatoes, chopped
1 clove garlic, minced
1 to 2 jalapenos, chopped
2 tbsp. lime juice
1/2 tsp. salt
3/4 c. fresh cilantro, chopped (optional)

Mix all ingredients together in a bowl and let chill for several hours. Serve with tortilla chips for a light but hearty snack. Will keep in a jar in the refrigerator for several days.
