ALL-PURPOSE HOMEMADE NOODLES 
3 c. flour
4 eggs
Lukewarm water
1/2 tsp. (or so) salt

Mix eggs into "well" of flour and salt. Add a bit of water to make flour workable. Rub a couple tablespoons of oil on hands. Work and knead dough into a soft workable texture. Add flour and/or water as needed.

Roll out to desired thickness (it's easiest to work with half of dough at a time) and cut to desired width. You can make cutting faster by folding dough and then cut.
