COCONUT CHEWIES 
2/3 c. shortening
1 c. light brown sugar
1 c. white sugar
2 c. flour
2 eggs
1 tsp. baking soda
1 tsp. baking powder
1 c. coconut
1 c. quick oatmeal
2 tsp. vanilla

Cream sugars and shortening. Add eggs, one at a time. Mix well each time; then add vanilla and flour alternately. Add coconut and oatmeal, and mix thoroughly. Drop dough in small portions on slightly greased cookie sheet. Bake at 350 degrees for 8 to 10 minutes. These cookies freeze well.
