BELGIAN WAFFLES 
2 c. flour
1 tsp. baking soda
1 1/2 tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
3 eggs, beaten
2 c. buttermilk
1/2 c. butter, melted and cooled to warm

In a large bowl, mix flour, soda, sugar, baking powder, salt, and cinnamon. Whisk in just until moistened, the eggs, buttermilk, and butter. Bake in a hot iron. Serve immediately. These are very crisp and light.

Well I used this as the foundation for the waffles: I halved the recipe and used i/2 cup of whole wheat pastry flour and 3/4 cup of regular white flour. The batter was a little thick so I used a little nonfat milk to thin the batter. The waffles were light and crisp which I liked. Great recipe and not much fussing with whipped egg whites and bottled beer blah blah blah quick fast and in a hurry GREAT
