BLUEBERRY YOGURT MUFFINS | |
1 c. oat bran 1 c. flour 1/4 c. brown sugar (packed) 2 tsp. baking powder 1 (8 oz.) carton plain yogurt 2 egg whites (or 1 egg) 1/4 c. skim milk 1/4 c. honey 2 tbsp. vegetable oil 1/2 c. fresh or frozen blueberries Combine oat bran, flour, brown sugar and baking powder. Add combined yogurt, egg, skim milk, honey and oil mixing just until moistened. Fold in blueberries. Fill muffin cups almost full. Bake at 400 degrees for 18 to 20 minutes. May substitute fresh or canned peaches. |
