MEATBALL PANCAKES | |
This recipe was made during the Depression. It was a favorite of my mother-in-laws. Serve with mashed potatoes and a green vegetable. Its a wonderful meal then topped off with a favorite fruit cobbler. 3 egg yolks 1/2 lb. ground beef 1/4 tsp. baking soda salt and pepper 1 tsp. lemon juice 1 tsp. parsley 1 tsp. grated onion 3 stiffly beaten egg whites Beat until light 3 egg yolks. Blend in ground beef, baking soda, salt, pepper, lemon juice, parsley and grated onion. Fold in the 3 stiffly beaten egg whites. Drop spoonfuls on hot greased griddle, when puffed and brown turn and brown other side. Serve immediately with mushroom gravy. Submitted by: Brenda Lautenschlaeger |
