LEMON MERINGUE PIE 
1/4 c. cornstarch
2 tbsp. flour
1 1/3 c. sugar
1/4 tsp. salt
1 1/2 c. boiling water
3 eggs, separated
1/3 c. strained lemon juice
3 tbsp. butter
1/2 tsp. grated lemon rind
Baked 9 inch pie shell
6 tbsp. sugar

Mix cornstarch, flour, sugar and salt in top of a double boiler, add boiling water. Blend. Cook over boiling water, stirring constantly until mixture thickens.

Beat egg yolks, stir in a little of the hot mixture. Pour back into double boiler. Cook 2 minutes more. Remove from heat. Add lemon juice, butter and lemon rind. Cool. Pour into baked pie shell.

Beat egg whites until stiff. Add sugar. Swirl over pie filling. Place in 350 degree oven. Bake until golden brown.
