HUCKLEBERRY PIE (OR ANY FRUIT
PIE)
 
4 c. berries
3 level tbsp. quick cooking tapioca
1 c. sugar
1 1/2 tbsp. lemon juice

Mix all together and let stand 15 minutes. Mix again. Pour into pie shell. Dot with butter. Cover with top crust.

Bake at 450°F for 10 minutes. Reduce to 350°F for 35 to 40 minutes.
