CHICKEN CASSEROLE 
3 c. cooked chicken breasts (4 or 5)
1 can Cream of Celery soup
1 can Chicken Noodle soup
2 eggs
1/2 c. chicken stock (or 2 chicken bouillon cubes)
3 slices day old bread, diced
1/2 tsp. pepper
1/2 stick butter
24 Ritz crackers, crushed (other types do well, or cheese croutons)

Mince chicken. Combine with bread. Beat eggs in soups; add chicken, bread and stock. Add pepper. Melt butter and stir into mixture. Pour in buttered baking dish. Top with cracker crumbs. Bake 1 hour at 350 degrees.

NOTE: May be frozen before or after baking.
