MOCK ANGEL FOOD CAKE 
2 c. sugar
1 level tsp. cream of tartar
7 eggs, separate
2 tsp. baking powder
1/2 tsp. almond extract
2 c. flour
1 c. boiling water
1/4 tsp. salt
1/2 tsp. vanilla

Sift sugar, flour and cream of tartar 5-6 times into large bowl. Pour 1 cup boiling water in and mix well. Cover and let stand overnight. Next morning, beat egg whites and salt until frothy. Add baking powder and flavorings, beating until it holds a firm point.

Fold egg whites into first mixture and mix well. Bake in a 9x13 ungreased pan at 350 degrees about 30 minutes. Cool well and top with Frosting for Mock Angel Food Cake (page 82).
