CREAM OF BROCCOLI SOUP 
1 bunch fresh broccoli
1 med. onion, chopped
2 tbsp. butter
1 potato, pared and sliced
2 cans chicken broth or make own chicken broth
1/2 tsp. salt
1 c. light cream or half and half
1/8 tsp. melted butter
Grated Velveeta cheese to taste

Trim, cut, clean and cool broccoli, drain. Saute onion in saucepan until soft. Add potato broth and salt. Heat to boiling lower heat. Simmer 15 minutes. Add broccoli. Simmer 5 minutes. Add cream and cheese. Bring to boil and melt cheese, salt to taste.
