POTATO CASSEROLE 
2 lb. frozen country style hash browns
Diced onion (optional)
1 pt. sour cream
2 cans cream of potato soup
1 soup can water
1 c. shredded Cheddar cheese

In large casserole or 9x13 inch pan, mix first 5 ingredients. Cover and bake at 375 degrees about 1 hour. Uncover and top with cheese. Return to oven until cheese is bubbly.

VARIATIONS: Add 3 cups diced ham to serve as a brunch or quick supper. Add 1/4 cup French fried onion rings to top of cheese during last 3-4 minutes in oven.
