EASY STUFFED PEPPERS 
4 green peppers
1 lb. lean ground beef
2 c. cooked rice (2/3 c. raw)
1/4 c. chopped onion
1 1/2 tsp. salt
1/8 tsp. pepper
1 (16 oz.) jar tomato sauce

Cut peppers in half lengthwise. Remove seeds and wash. Combine beef, cooked rice, onions, salt, pepper and 1/2 cup of sauce. Pile mixture into peppers in large baking dish. Pour remaining sauce over peppers. Cover tightly and bake in oven at 350 degrees for 1 1/4 hours or until peppers are tender, basting occasionally. Makes 4-6 servings.
