STEFADO 
3 lbs. stew meat
Salt and pepper
2 1/2 lbs. sm. onions
1 (6 oz.) can tomato paste
1/3 c. red wine vinegar
1 tbsp. brown sugar
1 clove minced garlic
1 bay leaf
1 sm. stick cinnamon
1/2 tsp. whole cloves
1/4 tsp. ground cumin
2 tbsp. raisins

Arrange onions over meat. (You can quarter large ones very nicely). Mix rest for sauce. Pour over meat. Cook covered 300 degrees for 3 hours. DO NOT STIR.
