PINEAPPLE UPSIDE - DOWN CAKE 
1 yellow Jiffy cake mix
1 (20 oz.) can pineapple rings in own juice
1 egg
7 Maraschino cherries
1/2 c. brown sugar
2 tbsp. butter

Use a 2-quart casserole with cover lid.

In medium mixing bowl, mix Jiffy cake mix, 1/3 cup of juice from can of pineapple and egg. Melt butter in 2-quart casserole in microwave on High for about 45 seconds. Add brown sugar. Microwave on High for 1 minute. Place pineapple rings on bottom of casserole (on top of brown sugar and butter). Place one cherry in center of each ring. Pour batter on top of pineapples and cherries; cover. Microwave on high for 7 minutes. Immediately, flip onto serving dish.

Since microwave ovens vary in power, you may need to adjust your cooking time.
