THREE - COLOR VEGGIE SALAD 
Raw beets
Raw carrots
Raw turnip or rutabaga

Scrub vegetables thoroughly. Peel with potato peeler. Grate with medium grater. Mound piles of veggies next to each other on a platter. Garnish with parsley. This makes a beautiful centerpiece which can be eaten. Serve with tofu cream dressing or dressing of your choice.
