BROCCOLI RICE 
1 1/2 c. minute rice
1/2 c. chopped celery
1/2 c. chopped onion
1 (8 oz.) pkg. shredded Cheddar cheese
2 cans cream of mushroom soup
1 sm. can mushrooms
1 pkg. frozen chopped (par steamed) broccoli
3/4 stick butter

Combine broccoli, celery, and onion; mix with rice. Add mushroom and soup. Put in 2 - 2 1/2 quart casserole. Add cut up butter and cheese on top. Bake at 350 degrees for 45 minutes. Stir 1/2 way through.

Variations - fresh mushroom, broccoli. Serves 6-8.
