CHINESE CHICKEN SALAD | |
3 chicken breasts (or sm. whole chicken) 1 knuckle of ginger (or whole pieces of ginger) 1 or 2 heads lettuce Saifun bean threads (available at oriental food dept.) 3-6 green onions, sliced thin diagonally 1 sm. pkg. almonds, toasted and cut up 1/4 c. sesame seeds, toasted DRESSING: 3 tbsp. sugar 1 tsp. Accent 4 tbsp. white vinegar 1/2 c. salad oil 2-3 tsp. salt 1/2 tsp. black pepper Cook chicken in water with ginger until done, drain and cool. (1 cup crab meat may be substituted.) To make dressing, combine all ingredients except oil and dissolve over low heat. Cool. Add oil. To make salad, combine lettuce (shred into bite size pieces), chicken (cut up in bite size pieces), almonds, onions and sesame seeds. Toss. |
