GRANNY TIGER'S CARROT COOKIES 
3/4 c. sugar
3/4 c. shortening (butter or whatever you like)
3/4 c. cooked, mashed carrots (3 good-sized)
1 egg
2 tsp. baking powder
1/2 tsp. salt
2 c. flour

FROSTING:

Grated peel & juice of 1 sm. orange
1 1/2 c. powdered sugar

Cream sugar and shortening. Stir in carrots and egg. Mix baking powder, salt and flour thoroughly (or sift together). Stir into carrot mixture. Drop small teaspoonsful on baking sheet. Bake 12 to 15 minutes at 375 degrees.

To ice: Add orange juice by tablespoonsful to powdered sugar until frosting consistency. Combine with the grated peel (the special flavor). Frost cookies while still slightly warm. Makes about 3 dozen. So good you'll want double! They sound slightly "healthy", we begged our Granny to make these as children.
