FRIED RICE WITH HAM AND EGGS 
4 tbsp. peanut or corn oil
2 eggs, lightly beaten
2 scallions or 1 onion
3 c. cold boiled rice
1 tsp. salt
1/4 c. boiled ham, diced
1/4 c. cooked carrots, diced
1/4 c. cooked peas

Optional. Heat 1 tablespoon oil in fry pan; beat eggs lightly and scramble in hot oil. Do not add milk or water to eggs. Remove eggs from pan. Cut scallions (white and green parts) into 1/4 inch pieces. Heat 3 tablespoons oil over a high heat in the fry pan, and scallions (or onion). Stir, add rice and salt, carrots, peas, ham and stir well. Add scrambled eggs broken up in small pieces and well mixed in. 4 servings.
