BEST EVER RHUBARB CAKE 
1 c. butter
2 c. flour
2 tbsp. sugar
6 egg yolks
1 c. sour cream or half and half
4 tbsp. flour
2 - 2 1/2 c. sugar
5-6 c. rhubarb
1/4 tsp. salt
6 egg whites
3/4 c. sugar
2 tsp. vanilla

Preheat oven to 350 degrees. Blend the butter, 2 cups flour and 2 tablespoons sugar together. Put in 9x13 inch pan and bake for 10-15 minutes.

Mix well together the egg yolks, sour cream, 4 tablespoons flour, 2 - 2 1/2 cups sugar, rhubarb and salt. Pour over crust and bake for 40-45 minutes until set.

Beat the egg whites until stiff, adding the 3/4 cup sugar (2 tablespoons at a time) and the vanilla. Spread on top of mixture. Bake 10 minutes until golden.
