ROMANIAN NOODLE LATKES 
1 (8 oz.) pkg. fine egg noodles
2 tbsp. unsalted butter
Oil
1 sm. onion, finely chopped
2 eggs
Salt and pepper
Caramelized Applesauce (see recipe)

Cook noodles according to package directions and drain well. Transfer to large bowl, add butter and blend well. Set aside.

In small skillet, heat 2 tablespoons oil over medium heat and saute onion until tender, about 5 minutes. Add onion to noodles. Blend in eggs. Add salt and pepper to taste.

In large, heavy skillet, heat 1/4 inch oil over medium heat to 375 degrees. Drop noodle mixture by tablespoonfuls into hot oil, flattening each spoonful with back of spoon to form thin latke.

Fry on both sides until golden brown and crisp, about 5 minutes each side. (Do not turn latkes until first side is golden and top is firmly set.) Serve with Caramelized Applesauce. Yields about 30 latkes.
