SHERRY'S QUICK HOMEMADE CHICKEN POTPIE | |
1 refrigerated ready made 9" pie shell 2 boneless, skinless chicken breasts, cut into chunks 1 can fat-free cream of chicken soup 1 can fat-free chicken broth 1 lg potato, cut into small chunks 1,( 16 oz bag,) frozen mixed vegetables 1/4 cup flour salt and pepper, to taste In lg ziplock bag, add flour, salt and pepper. Add chicken chunks. Shake to disperse evenly. Spray a large skillet with cooking spray and add chicken chunks. Lightly sauté over medium-low heat for 3 minutes. In a large bowl, mix all other ingredients completely. Add chicken to bowl, pour all ingredients into pie shell. Bake for 35-40 minutes. Put foil around edges of pie shell the first 20 minutes, so the edges won't burn. Take the foil off for the remaining time. Easy to make and so homemade tasting, no-one will know you took shortcuts to get such a delicious potpie. Submitted by: Sherry Monfils |
