CHINESE CHICKEN SALAD | |
2 c. cooked rice, cooled 1 c. sliced celery 1 1/2 c. cooked chicken breast cubes 1 (8 oz.) can sliced water chestnuts, drained 1/2 c. sliced fresh mushrooms 1/4 c. each sliced green onions (including tops), diced red pepper, and sliced ripe olives 1 tbsp. soy sauce 2 tbsp. each: vegetable oil and lemon juice 1/2 tsp. ground ginger 1/4 tsp. ground white pepper Lettuce leaves Combine rice and next 7 ingredients in mixing bowl. Combine remaining ingredients except lettuce in small bowl; blend well. Pour over rice mixture. Toss lightly. Serve on lettuce leaves. Makes four 280 calorie servings. |
