CHICKEN FAJITAS | |
1 pkg. tenderloins of chicken breast 1 tbsp. lime juice 3 tbsp. vegetable oil 1 tsp. chili powder 1/8 tsp. garlic powder Salt and pepper to taste 1 lg. green pepper, sliced thinly 1 lg. onion, sliced thinly 4-6 flour tortillas 1 c. grated Monterey Jack cheese Bottled salsa Sour cream SAUTEED: In a shallow dish, combine the lime juice, oil, chili powder, garlic powder, salt and pepper. Add the chicken, turning to coat. Let stand 10 minutes. Heat non-skillet to medium high. Add chicken, green pepper, and onion. Saute until chicken is done. Heat tortillas according to package directions. Spoon chicken mixture over tortillas. Add cheese, salsa, and sour cream, if desired. Fold or roll tortillas and enjoy. GRILLED: The meat mixture can be wrapped in foil to cook on grill over medium hot coals. |
