PUMPKIN APPLE STREUSEL MUFFINS 
2 1/2 c. flour
2 c. sugar
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1 c. pumpkin pie (canned)
1/2 c. oil
2 c. peeled, finely chopped apples

STREUSEL TOPPING:

1/4 c. sugar
2 tbsp. flour
4 tsp. butter

Mix streusel until crumbly.

Measure dry ingredients in separate bowl. Mix wet ingredients, stir into dry until blended. Add apples. Stir. Add streusel topping. Bake at 350 degrees for 30 minutes.

Makes 30 miniature muffins.
