SURPRISE PIE 
3 egg whites
1 c. sugar
1 tsp. baking powder
20 Ritz crackers
1/2 c. chopped pecans
pinch of salt

Beat egg whites until stiff. Gradually add sugar to egg whites, then vanilla, salt and baking powder. Fold in crackers and nuts. Pour into a buttered pie pan.

Bake 30 minutes at 350°F. Cool and top with whipped cream.
