CRANPECAN MUFFINS 
1 1/4 c. all-purpose flour, sifted
1 tbsp. baking powder
1/4 tsp. salt
1/4 c. brown sugar
1 c. ready to eat bran cereal
1 c. milk
1 egg
3 tbsp. vegetable oil
1 c. fresh or frozen cranberries
1/4 c. pecans, chopped

Preheat oven to 400 degrees. Grease muffin tins in small bowl, combine flour, baking powder, and salt. Set aside. In large bowl combine brown sugar, bran and milk. Let stand 5 minutes to soften cereal. Mix in egg and oil thoroughly. Stir flour mixture, cranberries and pecans into milk mixture until well combined. Mound batter high in muffin pan cups. Bake at 400 degrees for 25 minutes or until lightly browned. Serve warm. Makes 12 large muffins.
