EASY STEAMED PUDDING 
1 1/4 c. firmly packed brown sugar
1 c. all-purpose flour
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. nutmeg
1 c. softened butter
4 eggs
1 1/2 c. shredded raw potato (1 med.)
1 1/2 c. chopped dates
1 c. chopped walnuts

Heat oven to 350 degrees. In large mixer bowl combine brown sugar, flour, salt, baking soda, cinnamon, nutmeg, butter and eggs. Beat at medium speed, scraping bowl often, until well blended (2 to 3 minutes). Stir in potatoes, dates and nuts (mixture may look slightly curdled). Pour mixture into greased 2 quart round casserole; cover. Bake for 60 to 70 minutes or until wooden pick inserted 2" from edge comes out clean. Let stand 30 minutes, covered before serving. If desired, unmold onto serving plate. Serve warm with Egg Nog Hard Sauce. Yield: 12 servings.
