SHRIMP IN CHUNKY GAZPACHO | |
1 oz. uncooked sm. shell macaroni 3 c. tomato juice 2 tbsp. oil 1 tbsp. lemon juice 1/2 tsp. salt 1/4 tsp. basil leaves, crushed 1/8 tsp. pepper 1/8 tsp. hot pepper sauce 1 garlic clove, minced 1 1/2 c. cooked med. shrimp 1 c. (2 med.) chopped peeled tomatoes 2 tbsp. finely chopped green pepper 1 tbsp. finely chopped onion Cook macaroni. Drain. Rinse. Combine tomato juice, oil, lemon juice, salt, basil, pepper, hot sauce and garlic; mix well. Stir in macaroni, shrimp and tomatoes, cucumber, green pepper and onion. Cover. Refrigerate 2 hours. Use small bowls. Garnish with sour cream and cilantro. Refreshing. Cold soup. |
