LAYERED TACO SALAD 
4 chicken breast halves, boned, skinned and cubed
1 tbsp. oil
3/4 c. salsa
Guacamole (recipe follows)
3 c. broken tortilla chips
1 qt. torn lettuce
1 (15 oz.) can kidney beans, drain and rinse
1 c. shredded sharp Cheddar cheese
4 bacon slices, crumbled

Stir fry chicken in oil for 4-5 minutes. Stir in salsa and cover. Simmer 5 minutes. Prepare guacamole.

In bowl layer chips, lettuce, beans and chicken mixture. Cover with guacamole, spreading to edge of bowl to seal. Sprinkle with cheese. Cover, chill. Add bacon and toss just before serving.

GUACAMOLE:

1 ripe avocado, peel and mash
1/2 c. mayonnaise
1/2 c. salsa

Combine ingredients and mix well.
