MINESTRONE SOUP 
2 1/2 qt. water
1 c. chopped onion
1 c. chopped celery
1/4 c. oil
2 cans tomato paste
1 can V-8 (12 oz.)
1 pkg. frozen peas & carrots
2 tsp. salt
2 tsp. oregano
1 can kidney beans, not drained
1 clove garlic
1 c. macaroni
1 pkg. frozen spinach

Cook onions and celery in oil until soft. Add all but vegetables and macaroni. Simmer slowly for 1 hour. Add macaroni and vegetables; bring to boil and simmer. Small meatballs can be added if you wish.
