SUMMER RICE SALAD 
2/3 c. cooked rice (brown)
4 tsp. green onion, minced
4 tsp. bell pepper, minced
2 tsp. minced parsley
4 tbsp. sliced jicama or turnip, raw
4 tsp. celery, minced
2 sliced radishes
2 tbsp. mayonnaise (to taste)
Dash of tamari
1 1/2 tsp. lemon juice
Pinch of cayenne
1 tbsp. light wine
1/2 sm. tomato, seeded and cut into strips

Combine and chill.
