JUST PLAIN GOOD MUFFINS 
2 c. flour, sifted before measuring
2 tsp. baking powder
1/3 tsp. salt
4 tbsp. sugar
1 c. milk
1 egg, well beaten
4 tbsp. butter, melted

Sift together flour, baking powder, salt and sugar. Combine milk, egg and butter. Combine liquid ingredients with dry ingredients. Stir ONLY until all dry ingredients are moist.

The secret of good muffins is NOT to stir them too much. Never beat.

Pour into greased muffin pans. Bake at 425 degrees for 15-20 minutes.

NOTE: Time and temperature for baking may have to be adjusted for your particular oven and size of muffin pans.
