MARSH WILD RICE SALAD 
1 c. wild rice
4 chicken bouillon cubes
4 c. water
1 c. finely diced celery
1 c. sliced water chestnuts
1 c. diced, cooked chicken
1 c. green grapes, halved
1 c. peeled & diced oranges
1 c. red pepper, seeded & diced
1 c. cashews
1 c. mayonnaise
1/3 c. sour cream
1/2 c. orange marmalade
Dash lemon juice
1 tsp. grated onion
1/2 tsp. pepper

Cook rice, cubes and water, covered until water is absorbed, place in bowl and refrigerate, when cool add celery, water chestnuts, chicken, green grapes, oranges, diced red pepper and cashews. In separate bowl, mix together mayonnaise, sour cream, orange marmalade, lemon juice, grated onion and pepper. Stir dressing into the other ingredients. Chill several hours or overnight. Yield: 8.
