THE PERFECT WAFFLE 
2 cups all-purpose flour (measured after sifting)
1/2 tsp. salt
2 tbsp. sugar
3 rounded tsp. baking powder
2 eggs, separated
1 1/2 cups milk
1/2 cup (1 stick) butter, melted
2 tbsp. Crisco shortening, melted

Sift flour and measure. Sift again with: flour, salt, baking powder.

Beat the egg yolks with the sugar, then milk, and pour slowly into dry ingredients, stirring to prevent lumps.

Stir in melted butter and shortening, beating only until batter is mixed (some lumps will remain), then fold in the two beaten whites.

Bake each waffle on a piping hot iron approximately 4 minutes.

Note: You may substitute buttermilk for the milk. Reduce the baking powder to 2 teaspoons and add 1/3 teaspoon baking soda instead.

Variations: In recipes where the waffle will be served with savory accompaniments, such as Chicken a La King, reduce sugar by 1 tablespoon. In dessert recipes, add a teaspoon of vanilla.

This was excellent. It was crispy outside and tender inside with good flavor. I added a little butter flavoring. The beaten egg white adds a lighter texture.

This was really good. I cut the butter by about a quarter of a stick. If I were to make it again, I'd make the same adjustments as I don't need that fat and it had a really nice buttery flavor as it was. I also added about a tablespoon of vanilla extract. Yummy!

Loved this recipe! I added a half teaspoon of vanilla. Next time I might add a full teaspoon.
