SWEDISH RUSKS | |
1 c. sugar 1/2 c. butter 2 eggs (beaten) 1/2 c. buttermilk 3 c. flour 1 tsp. baking soda 1/2 tsp. salt 1/2 c. almonds (chopped) (optional) 5 cardamom pods (crushed) Cream butter and sugar. Add eggs and mix well. Add flour, buttermilk and rest of ingredients. On floured board, shape dough into 3 rolls. Place onto cookie sheet. Dough will be sticky. Bake in 300 degree oven 25 minutes or until light brown. Cool, then slice into 1/2 inch slices. Toast first on one side on cookie sheet and then the other in a 250 degree oven until light brown and dry. |
