CHINESE FRIED RICE 
2 eggs, slightly beaten
3 tbsp. oil
1/4 c. chopped mushrooms
1/2 c. finely chopped ham or pork
3 tbsp. soy sauce
3 tbsp. chopped green onion
4 c. cooking rice

In a large skillet, cook eggs in 1 tablespoon of oil, without stirring, until set. Invert over dish; cut into narrow strips. To the same skillet, add remaining oil and cook meat, mushrooms, onion, and 3 tablespoons soy sauce until onion is tender and meat cooked. Stir in cooked rice and egg strips; heat through. Serve with additional soy sauce. Makes 4-6 servings.
