HONEY BANANA BREAD | |
1/3 c. shortening 1/2 c. honey 1 tsp. vanilla 2 eggs 1 1/4 c. whole wheat flour 1/2 c. rolled oats 1 tsp. baking powder 1/2 tsp. salt, (optional) 1 tsp. n nutmeg 1 c. mashed bananas (about 2 medium) 1/2 c. chopped walnuts In mixing bowl, cream shortening and honey until fluffy. Add vanilla and eggs, one at a time, beating well after each addition. Combine whole wheat flour with dry ingredients. Add alternately with bananas, blending well. Stir walnuts. Spoon into greased 9 x 5 x 3 inch loaf pan. Bake 325 degrees 50 to 55 minutes or until loaf tests done in center. Cool completely before slicing. |
