GREEN CHILI CHEESE PIE 
CRUST:

6 tbsp. butter
1 1/4 c. flour
1 egg, slightly beaten
1/4 tsp. salt
1 tbsp. chili powder

FILLING:

1 1/2 c. shredded Jack cheese
1 c. shredded Cheddar cheese
1 (4 oz.) can diced chilies
1 c. half & half
3 eggs, slightly beaten
1/4 tsp. salt
1/8 tsp. cumin
Sliced ripe olives
Chopped green onion

Cut butter into flour, mix in egg, salt and chili powder. Stir with fork and form into ball. Roll out to fit a 9-inch pie tin. Flute edge. Prick with fork. Bake 12 minutes at 400 degrees.

Sprinkle all of the Jack cheese and 1/2 cup of the Cheddar cheese over slightly baked crust. Add green chilies. Beat eggs, half & half, salt and cumin. Add to above. Sprinkle remaining 1/2 cup Cheddar, sliced ripe olives and chopped green onion to taste on top.

Bake at 325 degrees for 40 minutes or until solid in center. Let stand 15 minutes before cutting.
