BEEF ENCHILADAS 
1 to 1 1/2 lb. of hamburger meat
1 can of chili (no beans)
1 pkg. of taco mix
Sm. jar of mild picante sauce
1 med. chopped onion
1 can of green chilies
1 lb. cheddar cheese (med.)
1 pkg. Casino Monterey Jack with jalapenos
1 pkg. flour tortillas

Brown hamburger, drain. Add taco mix, picante sauce, 1/2 onion, and 3/4 jar water; simmer until thick. In separate pan heat chili and chopped green chilies with some water (1/2 can or so). Spoon meat mixture on center of flour tortilla and roll. Put in baking pan - seam side down and pour chili mixture over. Add cheeses and heat in 350 degree oven for 15 or 30 minutes.
