LIGHT AND FLUFFY PANCAKES 
1 egg
1 c. buttermilk
2 tbsp. oil or melted butter
1 c. flour, sifted
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda

Blend egg, milk and oil. Sift dry ingredients together. Add to liquids and beat with a rotary beater until flour is moistened, (batter will be slightly lumpy). Grease heated griddle. To test, sprinkle with drop of water. When water sizzles griddle is ready. Pour batter from pitcher in pools slightly apart. Turn pancakes as soon as they are puffed and full of bubbles.
